Mawa Kaju Gulkand Roll is a luxurious Indian sweet that brings together the creamy richness of mawa (khoya), the nuttiness of cashews, and the floral sweetness of gulkand (rose petal jam). This roll is not only visually appealing but also incredibly flavorful, making it a perfect choice for festive occasions or as a signature item in a sweet shop.
To make this sweet, start by preparing the outer casing of the roll using cashews. Take about one cup of cashews and grind them into a fine powder. Make sure not to over-grind, as that can turn it into a paste. In a non-stick pan, add the powdered cashews along with half a cup of sugar and about two tablespoons of water. Cook this mixture on a low flame, stirring continuously until it begins to leave the sides of the pan and forms a soft dough. Remove it from the heat and let it cool slightly before kneading it into a smooth, pliable dough.
For the mawa filling, take about one cup of mawa and cook it on low heat until it becomes soft and slightly changes color. Add two to three tablespoons of powdered sugar and a pinch of cardamom powder, stirring well until the sugar dissolves completely. Allow this mixture to cool down, and then mix in a generous spoonful or two of gulkand. The combination of warm khoya and aromatic gulkand creates a heavenly filling.
Now it's time to assemble the rolls. Roll out the cashew dough between two sheets of butter paper into a thin, even sheet. Spread the mawa-gulkand mixture over this layer evenly. Carefully start rolling it like a Swiss roll, using the butter paper to guide and tighten the roll as you go. Once rolled, smooth out the surface gently and cut the log into equal-sized pieces.
These Mawa Kaju Gulkand Rolls can be decorated with edible silver foil (vark) and a touch of chopped pistachios on top. Let them set for a few hours before serving. They can be stored in an airtight container in the fridge for about a week. The delicate blend of textures and the floral essence of gulkand make this sweet a memorable treat that stands out in any dessert spread.
